Although, depending on its size and use, it may also be called noi kho cá, noi kho thit, noi kho tiêu, or noi kho to. Clay Pot Cooking is a technique of cooking food in an unglazed clay pot which has been soaked in water so as to release steam during the cooking process. This technique has a long history stretching back at least to ancient times.

We are a family-run restaurant and have been serving Vietnamese cuisine, traditional soup (Pho), and other dishes here in Waco, Texas for 20 years!

Thanh and Phong Le make sure every dish at their Waco Restaurant, The Clay Pot, is filled with authentic Vietnamese flavor. The menu features traditional dishes such as Pho, an herbal soup, chicken and vegetable dumplings.

Also featured is the restaurant’s namesake, Clay Pot, an aromatic blend of herbs and garlic served with rice, steamed vegetables, and stir fried beef, chicken, shrimp or tofu.

Thanh also likes to surprise her customers with some “off-the-menu” items, and many times customers order “whatever you’re cooking today.”

The authentic Vietnamese cuisine is made with natural and often organic ingredients cooked home-style, says Thanh, who learned her way around the kitchen from her mother-in-law, Ly Le.
